Arugula Salad with Berry Dressing Recipe

My family loves this relaxing healthy salad during the hot seasons. Sweet berries balance the a little bit sour balsamic putting on a costume.—Jennifer Kunz, Troy, Michigan
Arugula Salad with Berry Dressing Recipe



Ingredients

    1 cup cut in half clean berries, divided
    2 tbsps balsamic vinegar
    1 tbsp canola oil
    1 tsp. honey
    Sprint salt
    1 log (4 ounces) clean goat cheese
    2 tbsps perfectly sliced pistachios
    4 glasses clean arugula or baby spinach
    3/4 cup clean blackberries
    3/4 cup clean blueberries
    1/4 cup julienned peeled jicama

Directions

    For putting on a costume, place 1/4 cup berries, therapy, oil, sweetie and salt in a blender; cover and process until smooth.
    Roll goat dairy products in pistachios; cut into eight pieces. Split the arugula among four healthy salad plates; top each with blackberries, fact : blueberries, jicama, remaining berries and two pieces of goat dairy products. Drop with putting on a costume. Yield: 4 meals.
