Arugula Salad with Shaved Parmesan Recipe

A mom should get a wonderful healthy salad that brings together her preferred tastes, like clean peppery arugula, fantastic raisins, crispy nuts and destroyed Parmesan.     6 glasses fresh arugula
    1/4 cup fantastic raisins
    1/4 cup chopped almonds, toasted
    3 tbsps olive oil
    1 tbsp orange juice
    1/4 tsp. salt
    1/4 tsp. fresh ground pepper
    1/3 cup shaved Parmesan cheese


    In a large dish, merge the arugula, raisins and almonds. Drop with oil and fresh squeezed orange juice. Spread with salt and pepper; throw to coat. Split among four plates; top with dairy products. Yield: 4 meals.

Editor's Note: To toasted bread almonds, distribute in a 15x10x1-in. cooking pan. Prepare at 350° for 5-10 minutes or until gently brownad, mixing sometemes. Or, distribute in a dry non-stick container and warm over low warm until carefully browned, combining sometimes.
