Arugula Summer Salad Recipe

This easy summer-fresh healthy salad celebrities arugula and tomatoes—we really like them both. Olive oil—the only oil I use in my kitchen—flavors the mild vinaigrette putting on a costume. —Marie Strength, Raritan, New Jersey
Arugula Summer Salad Recipe



Ingredients

    4 glasses fresh arugula or baby spinach
    1 large sweet red onion, very finely sliced
    2 method tomato vegetables, cut into wedges
    DRESSING:
    2 tbsps olive oil
    1 tbsp orange juice
    1 tbsp red wine vinegar
    Spice up and salt to taste

Directions

    In a healthy salad dish, merge the arugula, red onion and tomato vegetables. In a normal size dish, stir the putting on a costume ingredients; drop over healthy salad and carefully throw to coat. Yield: 6 meals.
