Berry Chicken Salad for Two Recipe



Ingredients

    2 boneless skin free poultry sections (4 oz. each)
    1/8 tsp. salt
    1/8 tsp. pepper
    3 glasses clean baby spinach
    1/2 cup clean raspberries
    1/2 cup cut in half clean strawberries
    1/3 cup crumbled goat cheese
    4-1/2 tsp sliced pecans, toasted
    2 tbsps prepared fat-free strawberry vinaigrette

Directions

    Spread poultry with spice up and salt. Bbq grill poultry, covered, over medium heat for 4-7 minutes on each side or until fruit juices run clear.
    In a large dish, combine the green spinach, raspberries, berries, dairy products and pecans. Split among two serving clothing. Slice poultry and arrange over green spinach mixture; drop with vinaigrette. Yield: 2 meals.
