Berry Chicken Salad Recipe

Berry Chicken Salad Recipe



Ingredients

    4 boneless skin free poultry sections (4 oz. each)
    1/4 tsp. salt
    1/4 tsp. pepper
    1 package (6 ounces) clean baby spinach
    1 cup clean raspberries
    1 cup cut in half clean strawberries
    2/3 cup crumbled goat cheese
    3 tbsps sliced pecans, toasted
    1/4 cup prepared fat-free strawberry vinaigrette

Directions

    Spread poultry with spice up and salt. Bbq grill poultry, covered, over medium warm or broil 4 in. from the warm for 4-7 minutes on each side or until fruit juices run clear.
    In a large dish, combine the green spinach, raspberries, berries, dairy products and pecans. Split among four providing clothing. Piece poultry and organize over green spinach mixture; drop with vinaigrette. Yield: 4 meals.
