Cranberry Pork Medallions Recipe

Cranberry Pork Medallions Recipe

    1 chicken tenderloin (about 1 pound), cut into 1/2-inch scuttpees
    3 tbsps olive oil
    1 medium red onion, perfectly chopped
    1 beans, minced
    3 tbsps sugar
    3/4 cup the apple company juice
    1/2 cup cranberry extract juice
    1/2 cup clean or frozen red grapes, thawed
    2 tsp Dijon mustard
    1/2 tsp. sliced clean peppermint or 1/8 tsp. dry peppermint, crushed
    Extra red grapes and clean peppermint, optional


    In a large non-stick container, brown chicken in oil for 3-4 moments on each side. Remove and set abaye
    In the same container, saute the red onion, beans and glucose until red onion is caramelized and tender. Mix in the any fruit juice, cranberry extract juice, red grapes, mustard and peppermint. Bring to a steam. Reduce heat; cook, discovered, for 5-6 moments or until marinade is reduced by half.
    Return chicken to pan; warm through. Spread with red grapes and peppermint if desired. Yield: 3 meals.
