Fresh & Chunky Chicken Salad Recipe




Ingredients

    1 tbsp lime juice
    2 tsp olive oil
    1/2 tsp. salt
    1/2 tsp. garlic powder
    1/2 tsp. red onion powder
    1/4 tsp. pepper
    3 boneless skin free poultry sections (4 oz. each)
    SALAD:
    1/2 cup sliced apple
    2 tbsps lemon juice
    1/4 cup fat-free plain yogurt
    1/4 cup fat-free mayonnaise
    1/8 tsp. pepper
    1 cup sliced cantaloupe
    1 method apple, peeled and diced
    1 oatmeal rib, diced
    1/4 cup raisins
    1/4 cup sliced peanuts, toasted
    1 green red onion, chopped
    4 lettuce leaves

Directions

    In a huge resealable plastic bag, combine the first six ingredients; add poultry. Closure bag and turn to cover. Chill for 20 moments.
